Fruit-and-Chocolate Clusters

These are super cute and a pretty healthy-ish as far as desserts go. They are also easy to assemble—you’re essentially just layering melted chocolate with fruit in mini baking cups, then your refrigerator does the rest.

It’s the perfect three-bite sweet treat.

Fruit-and-Chocolate Clusters
Prep time: 20 min | Ready in: 1 hour
Makes: 16 clusters

1 cup vegan chocolate chips
1 cup chopped strawberries
1 cup blueberries

You’ll also need 16 mini baking cups

1. Prepare baking cups by putting them in mini muffin baking tin.
2. Over high heat, bring 1 to 2 inches of water to a boil in a medium saucepan. Reduce heat to low and place a bowl in the saucepan. Be sure the water doesn’t get displaced enough to spill over into the bowl.
3. Pour in chocolate chips.

4. Stir until completely melted.

5. Making 2 to 4 clusters at a time, spoon 1 teaspoon of chocolate into each mini baking cup.

6. Drop 4 to 6 pieces/chunks of fruit into chocolate. Press the fruit into chocolate a little so it’s partially submerged.

7. Pour another teaspoon of melted chocolate on top of fruit.

8. Press another 4 to 6 pieces/chunks of fruit into the chocolate, being sure each piece is touching chocolate so it gets “cemented” in there.

9. Repeat process until all 16 clusters have been assembled.
10. Refrigerate for 30-40 minutes, until chocolate has hardened. Keep refrigerated until serving.

Totally up to you if you want to remove baking cups before serving.
