I threw this together last Thursday night in a mad dash to get out of town, and was pleasantly surprised by how much I liked it. Not that I thought I wouldn’t, it’s just that I was really only going for functionality—I needed something in my stomach ASAP, and had zero time to cook—so the fact that it was the best smoothie I’d had in a while took me by surprise. It almost tasted like a dessert!
I usually go for strawberry versions, so this definitely reminded me to mix up the smoothie base every once in a while—tasty things can happen!
Single Serving, Snack, Breakfast | Vegan, Gluten-Free
Ready in: 5 min
3/4 cup frozen blueberries
3 frozen strawberries (these are optional—I just used them because I had them)
15-20 raw almonds
1 small fistful of spinach
1 cup non-diary milk (hemp milk is my favorite)
3-5 ice cubes
Directions: Process all ingredients together in a blender until smooth.
