Cinnamon? On a green juice?? Yep! This post is inspired by a juice I used to get at a downtown Seattle shop called The Juicy Café, and that combo sounded just as weird to me as it might be sounding to you right now. But, one sip and I was hooked.
This recipe also calls for a sprinkle of Himalayan sea salt, and there’s just something about the flavor created from that, the celery—which plays a big part—and cinnamon that just works. And it’s a fun tweak that keeps the basic green juice from getting boring.

Green Chai Juice
Ready in: 5 min
Yeilds: One 10 to 12 ounce juice
Ingredients:
1/2 cucumber
4 celery stalks, cut in half
1/2 apple
1/2 lemon w/peel sliced off
Large handful of spinach (or other greens)
1/4 teaspoon cinnamon
Pinch of Himalayan sea salt
Directions: Juice all produce together, then sprinkle with cinnamon and sea salt.
TIP: Ball up the spinach and push it through the juicer either between the other ingredients, or at the end, so it has something to push up against. That way it won’t fly around in there.
