Citrus Fruit Salad with Burnt Sugar

IMG_0264-2I’ve hosted a couple breakfasts in the past several weeks and have figured out a pretty easy, yet impressive-looking, spread. It’s my Gluten-Free Dutch Baby (I mix the batter the night before), scrambled eggs, and this fruit salad.

All the different types of citrus, plus the blueberries, create such a beautiful color combination. (Some much-needed brightness on these late winter days!) Then sprinkled with some shards of burnt sugar, it gives it the perfect sweetness and a pretty delightful little crunch.

Super easy, but totally dazzles.


Citrus Fruit Salad with Burnt Sugar
Ready in 20 minutes.
1 grapefruit
2 blood oranges
2 regular oranges
1-1/2 cups blueberries
1/4 cup raw sugar


  1. To prepare the burnt sugar, place a piece of tin foil in a medium skillet over medium heat, allowing an inch or two to hang outside of the pan. (You’ll use this to pull the tin foil onto the plate when the sugar is melted.) Make sure the tin foil is lying flat, and wait to turn the heat on until the tin foil is positioned correctly.
  2. Sprinkle raw sugar on tin foil, making sure it’s relatively concentrated so that granules will melt into each other.
  3. When the sugar starts bubbling remove the pan from the burner, but keep the tin foil on the pan. It’ll be a light brown color like this:
  4. When the sugar starts to get a little darker, wearing an oven mitt, pull the piece of tin foil onto a dinner plate. (Hold the plate right up to the lip of the pan and pull it over quickly using the excess tin foil hanging off the edge.)
  5. Allow sugar to cool completely—this will just take a few minutes.
  6. Sugar should easily peel off the tin foil in pieces. Burnt Sugar

  8. Slice citrus into segments and put in a serving bowl. (Here’s a great article that has both a video and a photo step-by-step for how to do that.)
  9. Toss with blueberries.
  10. Just before serving, sprinkle with burnt sugar.
