It’s like a souped up Greyhound, minus the gin.
Brussels sprouts and fennel are shredded, then tossed with nuts and pomegranate arils in this healthy salad.
Another mocktail for you—with some sugared holiday cheer! As always, I’d put money on the possibility that these things would be great with a shot of vodka…or perhaps gin on this one?? You’ll let me know? These have just the right amount of cranberry tang, and they look pretty stunning with those sugared cranberry garnish—those little guys are quite tasty, too. Enjoy! M Ingredients: 2 cups cranberries 2 cups sugar, divided 9 cups club soda or sparkling water Toothpicks or cocktail garnish spears (is that what you call those things??) Directions: Bring 1-1/2 cups of water and 1-1/2 cups of sugar to a boil in a medium saucepan. Cook until sugar is dissolved. Pour in cranberries, then remove from heat. Allow to sit for 30 minutes. To make sugared cranberries for garnishing: Using a slotted spoon, scoop out 3/4 to 1 cup of cranberries and place them on a cookie cooling rack with parchment paper below. This is the first time I’ve ever baked with cranberries, and it will not be the last. I’ve been a little sensitive to overly sweet things in the past couple years (headache city!), so I loved the tartness of the cranberries mixed with just a little sweet from some brown sugar. You can make this dessert two ways—as a tart, or as a crumble. It just depends on what you’re after. The nice thing about the tart is that it shows off the cranberries, and the nice thing about the crumble is that it keeps the crust/crumble in better shape. It was super delicious both ways, so you really can’t go wrong. I recommend serving this dessert with ice cream (or a non-dairy version; I really like Almond Dream)—it perfectly balances out the sweet and tartness. You can also use a dollop of sweetened cashew cream. Hope you like this one—more cranberry baked goods to come between now and January! The color of this drink is everything. And it tastes pretty dang good, too.
You KNOW I couldn’t let this day go by without paying tribute to one of my favorite foods (yes, I consider it a food—a food group, actually) on the planet: I’m talking about coffee. And turns out I don’t need a reason to celebrate…this little round-up includes coffee-related recipes that I’ve created this year with no holiday in mind. Coffee in itself is celebration-worthy, I say. So, pick your poison below, and I hope there’s lots of buzz surrounding your day! M 1. Hemp Milk Latte 2. Pumpkin Spice Latte 3.
