Rosemary Roasted Almonds

I made these yesterday, which as it turns out, was National Almond Day. Someone commented to that effect when I posted a sneak peek pic of this recipe on Instagram, while I was totally clueless as to my timeliness. I mean, what are the chances, right?? Actually, there was a one in 365 chance of doing that, and…BOOM! I think this is when you’re supposed to buy a lottery ticket, right? Anyhoo, I had been meaning to make this recipe for weeks, and realized I only had exactly as much fresh rosemary left as I’d need, so decided to get my rear in gear. I’d never roasted almonds before, but let me tell you, I am SO a fan, now.  So easy, so tasty. The perfect healthy, salty snack. I mean, we all know, raw almonds are best for you, blah, blah, blah. Pear Apple Zinger

I usually try to incorporate veggies into my juices, but every once in a while I just want a sweet liquid treat. The lemon in this juice keeps things from getting too sweet, while ginger gives it a little zing. And this one is 7-year-old, blond-pig-tailed, UW-fan-approved, as you’ll see below. I enlisted the help of one my favorite little friends for this post. Happy juicing! M Pear Apple Zinger Single Serving Ready in: 5 min Ingredients: 1 pear 1-inch piece ginger 1/2 apple 1/2 lemon Directions: Slice the rind off the lemon, and cut up fruit into pieces that fit the juicer tube. Juice it up. And put some muscle into it like my little friend. Check out the guns on that girl! 😉 Pour and enjoy! (By the way, how about that juice foam? I usually am not a fan, but with this one I think it looks really pretty!)

Peaches ‘n’ Cream Towers

I bought four peaches at the grocery store yesterday, and they were total perfection. All four. That never happens! (And yes, I have already eaten all four.) This post gives you just one way to make the most of this juicy, sweet fruit—probably the most classic of ways, actually. With a vegan twist, of course. Be peachy! M Peaches ‘n’ Cream Towers Two Servings | Vegan Prep time: 1 hour | Ready in: 1 hour, 5 min Ingredients: 1 peach 2 tablespoons raw honey 1/4 cup cashew cream Directions:  Make cashew cream. Cut peach into 8 slices. Spoon 1/2 tablespoon of cashew cream on each peach slice. (You’ll use 4 slices for each serving.) Stack slices into two, four-slice towers, then drizzle honey over each.
