Apple pie makes me…well, I think you can guess. (And the same goes for miniature-sized things!) It’s my favorite of ALL the pies and my go-to during the holidays—I am responsible for making it at Thanksgiving and Christmas in my family, while my dad makes almost literally everything else. (My sister, my mom, and I can usually be found giggling in the living room.) For this recipe, I wanted to create a version that would work at a pre-holiday, fall cocktail party—so I was thinking, tiny and fancy-looking. Enter: mini cheesecake tins! I love these because they are really easy to get the pies out of (there is a loose circle piece that sets inside each cup over a small hole in the bottom, so you can use your finger to push the little pies up), and the cylinder shape is quite classy. A couple Marshmallow Mondays ago, I did a post about Coffeemallows—which are delicious—but, I didn’t stop there. I created some souped-up Coffeemallows for HelloGiggles inspired by the core Starbucks espresso drinks that were on the menu when I was a barista. It was a looooong time ago, you guys. I bought four peaches at the grocery store yesterday, and they were total perfection. All four. That never happens! (And yes, I have already eaten all four.) This post gives you just one way to make the most of this juicy, sweet fruit—probably the most classic of ways, actually. With a vegan twist, of course. Be peachy! M Peaches ‘n’ Cream Towers Two Servings | Vegan Prep time: 1 hour | Ready in: 1 hour, 5 min Ingredients: 1 peach 2 tablespoons raw honey 1/4 cup cashew cream Directions: Make cashew cream. Cut peach into 8 slices. Spoon 1/2 tablespoon of cashew cream on each peach slice. (You’ll use 4 slices for each serving.) Stack slices into two, four-slice towers, then drizzle honey over each.
Since starting this blog in March, one of my favorite byproducts has been all the different people I’ve connected with in the process. Food has always been something that has brought people together, but social media and the internet has made that exponentially so. I love that I have “friends” and followers from places like Sweden, Egypt, and Indonesia, and that on my Instagram feed, I get breakfast ideas from bloggers in Australia who are already starting the next day as I’m turning in for the night. Those acai bowls get me every time. And I’ve been extra delighted by the people I’ve discovered that are indirectly related to food—I have a really fun collaboration coming up in September with a company whose products immediately made me want to have a party the second I saw them.
