Cranberry Sauce Syrup

Just in time for Christmas brunch! I’ve said it before and I’ll say it again—I’m a super fan of the tartness cranberries boast, and I certainly was not going to pass up the opportunity to pair them with one of my favorite foods ever: pancakes. ‘Tis the season. Along with the cranberry syrup, I added a couple of layers of cashew cream to the pancakes pictured for an extra dose of holiday joy and deliciousness. And, might I also suggest putting a bowl of Blueberry Syrup on your holiday breakfast table? I think a spoonful of each would be twice as nice. M Cranberry Syrup Ready in: 25 min Yeilds: about 3 cups Ingredients: 2 cup cranberries 1/4 cup brown sugar 3 tablespoons butter 1 tablespoon lemon juice 1/2 cup maple syrup Directions: In a medium saucepan on medium-low heat, melt butter, then stir in 1/4 cup of water, lemon juice, and brown sugar. Hawkcakes with Blueberry Syrup

Okay, this one is for all the Seahawks fans out there—a.k.a. 12s—on the first “Blue Friday” of the official season. Although I am confident that even if you aren’t a fan, you will enjoy these pancakes all the same. Sunday’s kickoff is at 10am, so there was really just one way to go with the game day “snacks”: brunch! Adding spinach to the pancake batter makes these delicious Hawkcakes both green, and healthy. Apple-Cinnamon French Toast Pancakes

Yes,  you read that correctly. Cooked pancakes are dipped in an egg batter in a very French toast-y way, and sent back to the skillet for a couple more minutes. I’ve been doing a lot of pancakes on this blog because I’ve discovered delicious ways to do them grain free (which I’m trying to do for most of my meals), but the funny thing is, I’m actually a French toast girl at heart. I was reminiscing about my French toast days last weekend when I had a brainstorm: what’s to stop me from giving those pancakes the same treatment I’d give slices of bread? Nothing. Nothing at all! And I must say, the result is simply amazing. Remember how good the frozen yogurt was on that one episode of Seinfeld? These pancakes are that good.
