Peaches ‘n’ Cream Towers

I bought four peaches at the grocery store yesterday, and they were total perfection. All four. That never happens! (And yes, I have already eaten all four.) This post gives you just one way to make the most of this juicy, sweet fruit—probably the most classic of ways, actually. With a vegan twist, of course. Be peachy! M Peaches ‘n’ Cream Towers Two Servings | Vegan Prep time: 1 hour | Ready in: 1 hour, 5 min Ingredients: 1 peach 2 tablespoons raw honey 1/4 cup cashew cream Directions:  Make cashew cream. Cut peach into 8 slices. Spoon 1/2 tablespoon of cashew cream on each peach slice. (You’ll use 4 slices for each serving.) Stack slices into two, four-slice towers, then drizzle honey over each.

Orange-Ginger Spritzer

Happy halfway through the week! This is just a mini post to share a refreshing little number I made the other night. I only had a tiny little bit of my favorite ginger ale left to go with my big ole bowl of popcorn, and that was not going to work. So, I pulled an orange out of the fridge, juiced it, and poured that and the ginger ale all over a glass of ice. Oh, it was good. Next time I’m going to try it with grapefruit juice—sort of like a salty dog that’s a little light on the salty. Mmm, I can already taste it… Cheers! (Clink.) Monster S’more Cake

I think this may be it with me and marshmallows for a while (probably…possibly…perhaps not), but really, you can’t go on a marshmallow run without addressing the obvious: s’mores! Which, btw, is one of the only two things I like about camping. The other one is campfires—I’m all for being out in nature, but when I’m done with that I want to sleep in a bed, and blow dry my hair in the morning. Anyhoo, I dreamed up this recipe—which is essentially one giant s’more—on one of my Sunday night creative surges where I’m about two minutes from going to bed, then I think of something I NEED to make first thing in the morning. So, off to the grocery store at 11:30pm I go. Chocolate-Covered Marshmallows with Strawberry Hats

Okay…I don’t normally do desserts that are straight-up sugar bombs, but it’s really hard for me to get through a summer without at least a few marshmallows. It was one of the few sugary foods we ever had around our house growing up, so they remind me of being a kid. And they just make me happy. I think it’s their puffiness. This recipe is crazy easy. I’m always looking to create things that look amazing but require as little effort as possible, and these sweet bites are definitely THAT. And just an FYI, I wrote the recipe to yield six marshmallow treats…that seemed like a nice tidy number that would allow the ingredient amounts to be multiplied easily in order to make however many you’ll be serving. These would be great to take to a BBQ or summer party.
